  2. In a large skillet, heat the olive oil over medium heat. Add the red onion and garlic and cook until softened, about 3-5 minutes.
  3. Add the diced sweet potatoes and red bell pepper into the skillet and cook for about 8-10 minutes, or until they are tender and slightly browned.
  4. Add the black beans, chili powder, cumin, smoked paprika, salt, and pepper to the skillet and stir to combine. Cook for an additional 2-3 minutes.
  5. Warm the gluten-free tortillas in the oven for about 5 minutes.
  6. Spoon the sweet potato and black bean mixture onto each tortilla and roll up like a burrito.
  7. Serve the burritos hot and enjoy!
